For the second installment of the November spotlight ingredient series featuring pumpkin, I'm sharing a delicious recipe for pumpkin-carrot whoopie pies. Being that they are so sweet and delicious, they make a great treat to share with coworkers at your holiday parties or at a family dinner. Just don’t except any leftovers once you share them with a crowd! Everyone will love the soft, springy texture of these whoopie pies and will be asking for more. With Thanksgiving less than two weeks away, I think they would be a perfect treat to add to the dessert table. Heck they might even show up the pumpkin pie with how delicious they are.
