You know those times when you search through your fridge only to come up empty? Yeah, me too! In an attempt to avoid these moments it's important to have a few pantry cooking recipes up your sleeve. For a new cooking series, I'll be sharing some of my favorite & most delicious pantry recipes. Today's panty cooking recipe is my insanely satisfying & crowd pleasing chickpea salad. It's the perfect pantry meal to provide healthy carbs and protein in a pinch.
The best thing about this meal, and most pantry meals, is that it allows for customization and creativity in the kitchen. If you don't usually keep canned chickpeas on hand, I highly recommend adding them to your grocery list. The uses you'll find for them will amaze you. For today I created an easy & delicious mediterranean style chickpea salad, but you can easily adjust the ingredients to whatever you have stored away. A few of my other favorite flavor combinations to use are jalapeño & cilantro, mozzarella & roasted red peppers, and beets with goat cheese & orange juice. That last one may sound a bit strange, but it is actually delicious.
- 1 can chickpeas
- 2 cloves minced garlic
- 1 chopped small onion
- 1/4 cup mixed pitted olives
- 1/4 cup feta cheese
- 1/4 cup sundried tomatoes
- 3-4 chopped marinated olives
- Juice of half a lemon
- 2 tbsp olive oil
- Parsley to taste
- Rinse and dry canned chickpeas
- Toss chickpeas with remaining ingredients
- Adjust olive oil & lemon to add more liquid if desired
- Refrigerate for 1 hour prior to serving for best flavor
