For all your beach vacationers out there, this post is for you! Just because you are on vacation doesn't mean you have to sacrifice waking up to high quality coffee. Now I'm not talking about running to the closest coffee shop, I'm talking about simply rolling out of bed and within minutes find yourself sipping on the sweet caffeinated coffee of your dreams. With a little prep work and a purchase of some bottled cold pressed coffee you won't have to worry about dealing with crappy hotel coffee pots ever again!
Now when I'm on vacation, I like to spike my cold pressed coffee with a little coconut simple syrup to give me that island feel. Making the simple syrup is extremely easy and will last about a week or two in the refrigerator. To make my coconut simple syrup all you need to do is combine 1 1/2 cups water, 2/3 cups sugar, and 1/2 cup sweetened coconut in a sauce pan and bring it to a boil. Let it boil for about one minute, then remove from heat and cover to let the coconut flavor really seep in. After about thirty minutes strain out coconut shreds and store in an airtight container that is travel & mini fridge friendly.
Once you are off enjoying your relaxing vacation just remember to pick up a little cream or milk to dilute your coffee (cold pressed is extra strong) and you are all set. When it's time to assembly simple pop a few ice cubes into your cup, fill it up half way with coffee, and finish it off with your milk/cream and coconut simple syrup to taste! Trust me guys, you'll never complain about bad hotel coffee again.
