Today we are introducing our new fall food contributor, Cassandra Monroe. She will be sharing with you guys some mouth watering delights that will be perfect to whip up as the weather starts to gets chilly. Let me know how you like the new addition to the MINCK | CO. family, and don’t miss checking out a little bit more about Cassandra over on the about page. Now onto what you guys really care about, the recipe!
I don’t know about you, but pasta is the key to my heart - add some bread to the side and it’s a done deal, I’m yours!
So when I came across this Lemon Chicken Pasta with Parsley recipe from Ricardo Cuisine, I knew I had to try it out. I usually go for pastas with plenty of sauce, but this recipe looked so appealing.
The olive oil, garlic, parsley and fresh lemon mixture will leave your kitchen smelling fragrant and the light, crumbly texture of the grated parmesan cheese makes this dish simply irresistible. Did I mention this dish only takes about 30 minutes to make! Yes you read that right, this is a thirty minute meal that is actually as delicious as it sounds.
I love this recipe because it’s really simple to make and is really light, so it won’t leave you feeling overstuffed or heavy. It’s a perfect fall meal to help you stay healthy, while getting a ton of flavor. Parsley is the key ingredient that elevates this dish by adding a flavorful punch. Side note: fresh parsley can often be mistaken as cilantro so make sure you read the labels at the market! Fresh parsley has pointy leaves (P is for Pointy) and cilantro has curved leaves (C is for curvy.)
This dinner is perfect for a date night meal, but if you’re considering of hosting a dinner party with this Lemon Chicken Pasta with Parsley as a main dish, I suggest pairing it with a light summer salad and a lively white wine. A simple Pinot Grigio will complement the dish’s herbal flavors.
