It's that time of year again, ice coffee is back! I live for a warm day where I can indulge in some delicious ice coffee. When I am looking to really enjoy myself, I like to whip up my incredibly tasty lavender & honey cold pressed iced coffee. It takes a bit extra time, but the sweet deliciousness is totally worth the extra effort. The best part about this drink is that once you put in the initial work, you will have an amazing iced coffee to enjoy all week long. All you need is cold pressed coffee, lavender & honey simple syrup, ice and light cream (or half&half). I always put a sprinkle of salt, yes I said salt, into my coffee to curb any bitterness. It makes the iced coffee that much smoother.
Step One: Brew cold pressed coffee over a 24 hours period. My favorite base recipe is from Bon Appetit. After a few tries at it, you'll find your perfect blend and the process will become that much easier. Using a french press makes the process a lot less work and much cleaner in my opinion.
Step Two: Make lavender & honey simple syrup. Combine 1 cup water with 3/4 cup sugar and 1/4 cup honey in a saucepan. Add in one tablespoon of dried lavender, and bring to a boil cooking for a few minutes until the sugar has dissolved and the syrup starts to thicken. Remember your syrup will thicken more as it cools.
Step Three: Assemble iced coffee. Fill a tall glass with ice cubes, coffee ice cubes if you are feeling extra fancy, and pour cold pressed coffee 3/4 of the way up the glass. Add in light cream or half & half at this time. Finish it off with one tablespoon of your lavender & honey simple syrup, more depending on how sweet you like it, and gently stir. For those of you who like to try something different add in the tinniest pinch of salt at the end! Enjoy!
